You May Win Friends with Salad: Students Rally for Salad Bar at DBHS

Students from an advanced placement environmental science course at Diamond Bar High are working to encourage more healthful eating on campus by petitioning for a salad bar to be added to the campus cafeteria.

students are looking to hit the salad bar with a petition presented by Advanced Placement environmental science students at a rally last Tuesday.

The class has decided upon the slogan "Simply Fresh" for a team that will look to install a salad bar at the school by the year's end.

“We felt that it was important to implement a salad bar, not only for the benefit of the environment, but also for the health of Diamond Bar High students," Cindy Mo, president of the Simply Fresh team, said. "It’s important for us to make a lasting impact.”

The rally Tuesday centered on the year-end salad bar project, but a series of events and contests made the also aimed to foster discussion about healthful diets.

Students Atosa Ghassemi and Samantha Diaz took the stage to present facts and figures about healthful eating to classmates and wore eco-friendly "I'm Fresh" t-shirts as a part of the campaign.

Students also had a little fun, competing in a watermelon eating contest with prizes and giveaways.

“I am proud of the class for trying to help our entire school community to eat a healthier diet while at the same time reducing our impact on the environment," David Hong, teacher and Instructional Dean, said.

Four other environmental science classes also held rallies on campus in March, tackling the topics of recycling required reading books, plastic bag use, water conservation, and wildfire prevention measures:

  • A new book recycling program that one group is working on with English teachers would allow students to pass down required reading books to the incoming class.
  • Another class will work with the city of Diamond Bar to draft an ordinance to reduce single-use bag consumption by passing a city ordinance to ban the use of the bags. The project would also create a program to create reusable bags from old t-shirts.
  • One class will work on a water conservation project to install waterless urinals at the Diamond Bar High campus.
  • And another class will work on wildfire prevention near different trails and heavy brush areas in Diamond Bar.
