Encinitas Sushi Lounge Opening This Spring

The doors could open as soon as April.

Attention sashimi and sake fans, there’s a new operation coming to town: Encinitas Sushi Lounge is slated to open this spring in the Santa Fe Plaza Shopping Center, across the street from Scripps Memorial Hospital.

The restaurant is the brainchild of co-owners Frank Interlandi and Katie Rooney, who both cut their teeth at Sushi on the Rock as the chef and general manager, respectively. “Having worked in the coastal area, we really fell in love with it and we’re excited to be opening our second location there,” said Rooney of the venture in Encinitas. “Coastal living and sushi are a natural fit, and we’re really hoping to tailor the menu to the local community.”

The current menu includes a hefty selection of nigiri, sashimi, sushi rolls, salads and entrées. There’s also a handful of vegetarian options and many gluten-free dishes. Lunch specials are offered throughout the week, as are happy hour discounts on drinks and food.

Rooney says the Encinitas location is being completely remodeled right now, and she’s aiming for a grand opening some time in April.

“We’re moving full steam ahead and are excited to be joining Encinitas,” she says.
