, a local nonprofit that supports environmental education, wellness programs and school garden education worked with Jimbo's to coordinate this fundraising event. HDP is working with the Encinitas Union School District as ‘green consultants,’ researching and implementing many environmentally friendly projects—including the one-acre educational farm at Ocean Knoll.
“We are grateful for the support of the Jimbo's community,” said Mim Michelove, who “They understand the value of educating people about organically grown food and caring for the natural environment.”

HDP is also coordinating the first district-wide Earth Day for EUSD. In addition to several events at all the campuses, each school will receive an apple tree courtesy of the Wishing Tree Company.
“The greening of our schools provides an asset to the Encinitas community, fostering positive change in our children, their future and in our area,” Michelove said.
Already reaching beyond our local scope, the Ocean Knoll educational farm concept has piqued the curiosity of Los Angeles-based Big Sunday, a nonprofit that coordinates the largest region-wide community service weekend in America every year. Big Sunday has paired the Ocean Knoll Farm project with volunteers from Parsons Corporation, a global engineering, construction, technical, and management services firm.
