Stone Flats Opens in Encinitas

When Brad and Anne Mason had company at their house, the crowd would usually end up around the backyard oven. That’s where they’d cook flatbread pizzas, which their friends could customize with toppings they’d laid out. The concept was simple, and a big hit.

The Masons have now brought that concept to Encinitas with their restaurant Stone Flats, and they’re hoping it’ll be equally popular with the general public. The fast-casual eatery opened last week off El Camino Real, and staying true to its original inspiration, it offers made-to-order flat-bread pizzas.

Customers start by picking what type of dough they want for their crust, which is made in-house. Then they decide what kind of sauce, toppings and cheeses they’d like. There’s a medley to pick from—everything from bacon, to blue cheese, to tofu, to goat cheese. A few minutes later, your creation is ready. A custom flat-bread pizza will run you $6.95, unless you do a meatless version, which is a dollar less and comes with an unlimited choice of veggies.

If you’re feeling uninspired, you can pick from some of their standard combos, like barbecue chicken or margherita. Those flatbread pizzas range from $4.95 to $6.95. You can add a cup of one of their house-made soups, chili or a salad for a few more dollars.

For a $2.50 upcharge, you can order your flat-bread pizza on a gluten-free crust, and everything can be made without cheese to accommodate vegans or anyone who is lactose-intolerant. Stone Flats also serves wine and beer, including Stella Artois and Stone IPA.

The interior modern décor was created using a good chunk of recycled and reclaimed materials, and the to-go containers are recyclable or compostable.

Brad and Anne Mason plan to host a grand opening celebration for the community next month, and Patch will keep you posted on those details as they’re announced.
