How do eating meat and water conservation go hand and hand?

CHESTER, CT — Environmental tip from the Chester Conservation Commission:

“Water use data suggests that if Americans avoid eating meat 1 day a week, it would save an amount of water equal to the entire flow of the Colorado River each year.” So why do we in Chester care about this NYT statement? The Colorado River is shrinking, putting both urban and agricultural activities in 4 western states plus Mexico in jeopardy. Much is used to grow the food we eat as well as the food our meat eats, so it behooves us to contribute to its conservation in the middle of an unprecedented drought in the west plus the effects of climate change."
