The latest Gem serves up authentic Mexican fare.

MANSFIELD, CT — Tucked into a nook on Route 31, close to the intersection with Route 32, is an established Mexican-themed restaurant that, once you discover it, keeps you coming back.

Welcome to this week's Hidden Gem, Coyote Flaco.

The owners tell us that "delicious Mexican food from our family's recipes" awaits. The sauces are made fresh every day from those recipes and the margaritas always feature fresh lime juice.

Starters range from traditional tacos, nachos and empanadas to Almejas Andeluz, a Spanish-style seafood stew with clams, shrimp, and pico de gallo sautéed in white wine and tomatillo sauce served with flour tortillas to Chorizo Norteno, sausage sauteed in a spicy chipotle sauce served with flour tortillas.

Entrees can be traditional like fajitas and chimichangas and enchiladas to the creative, like the Coyote Wrap — a spinach flour tortilla filled with rice, black beans, pico de gallo, cheese, and your choice of filling, served with guacamole and sour cream.
