New ‘Fast-Casual’ Mexican Restaurant Coming Soon To North Haven
The new restaurant will be the franchise's fifth location in Connecticut.
NORTH HAVEN, CT — A new Mexican-fusion fast-casual restaurant is coming to Universal Drive in North Haven, according to First Selectman Michael Freda.
“For the past two years, there has been a 2,000 square foot vacancy next to Jersey Mike’s on Universal Drive,” Freda wrote in a post on Facebook. “In the coming weeks, there is a new concept that is very popular in other cities and towns that will be coming to that location and it is called Bubbakoo’s.
“This is a Mexican Fusion Restaurant that will feature a variety of different Mexican entrees for those on the go.”

The North Haven restaurant will be the fifth Bubbakoo’s Burritos location in Connecticut. Bubbakoo’s Burritos currently has locations in Norwalk, Orange, Oxford, and Stamford.
Bubbakoo’s Burritos, which started in New Jersey in 2008, has more than 100 locations in 15 states in the U.S. It is described as the “community’s go-to Mexican-fusion fast-casual restaurant,” according to its website.

“Cofounders Paul Altero and Bill Hart developed the concept after years of working together in the restaurant industry honing their craft,” according to a post on the website. “The duo’s complementary skill sets are the foundational elements behind the brand’s success. They have built a team that with expertise in all functional areas to provide best-in-class support for Bubbakoo’s Burritos franchisees.”
