“Rollins Dining is a community that nourishes the body and mind,” said Cristina Caro, a Registered Dietitian Nutritionist and Wellness Manager with Rollins Dining who has more than 20 years of experience in health promotion and wellness.

Unpredictable class schedules often make it tempting to skip meals, but doing so can lead to fatigue, poor concentration, and overeating later. “Maintaining a consistent eating schedule is one of the simplest ways students can support their health,” Caro said. Flexible dining hours and multiple campus locations make this possible.

With unlimited options in the dining hall, it can be easy to gravitate toward comfort foods. Caro, who holds degrees in clinical dietetics, marketing and international business, encourages students to follow the “Balanced Plate” approach: half fruits and vegetables, one-quarter whole grains, and one-quarter lean protein, with sweets in moderation. “We provide in-depth nutritional information at every station so students can make informed decisions easily,” she said.
Accessible and Proactive Support
Caro, an expert in food allergies and food safety, emphasized that the dining team is approachable and easy to reach. Students are encouraged to share ideas, ask questions, or raise concerns directly through a text messaging service that goes straight to dining managers. The team also makes a point of communicating proactively, keeping students informed about menu updates, wellness initiatives, and special events. “Our goal is to stay connected with students and make sure they always feel supported,” she said.
Exploring Wellness Offerings
The dining program provides free nutrition counseling with Caro, who regularly meets with students and offers resources tailored to their needs. The program also includes plant-forward and allergen-friendly menu choices. “We want students to know we’re here for them, and we’re always open to hearing what they need,” Caro said.

Meals at Rollins provide opportunities for students to build friendships, exchange ideas, and feel part of the community. “Dining together fosters friendships, sparks conversations, and builds a sense of belonging,” Caro said.

Meal plans are tailored to different lifestyles and schedules. The All-Access Plan, for example, provides unlimited entry to dining halls, making it easier to avoid skipping meals or relying on snacks.
Caro, who frequently speaks at health panels and participates in wellness fairs, encourages students to take advantage of the resources available to them. “With the right support, students can build lifelong healthy habits while enjoying every bite of their college experience,” she said.
