Sweet and Spicy Ginger Pork with Applesauce and Golden Raisins
Barbara Mason is this week's Recipe of the Week winner!
I cook this all in one pan on the stovetop.
Ingredients:
Boneless pork loin chops -pack of 4-6
Natural applesauce
Ginger (i use the jarred ginger slices from the asian section) or fresh sliced ginger
Agave or honey
Golden raisins
2 cloves garlic
3 tbsp olive oil
4 tbs water
Pinches of sea salt
1-2 tbs chili powder
1-2 tbs nutmeg
1 tsp onion powder
Rub pork steaks with ginger and then the onion powder, sea salt, chili powder and nutmeg. Heat olive oil in pan and saute smashed garlic. add pork to pan and keep tuning -- they should get darker and your pan will get a caramelized sauce by the end. In a pile next to the meat, add your raisins to pan, add water to them so they can plump up. When pork is cooked through, drizzle the agave or honey over each piece of pork, scoop the applesauce (about 2 tbs on each) on top of the pork, scoop the raisins and pan drippings over each piece. Serve with brown rice, or over a bed of steamed or raw spinach leaves.
