The evening begins with a delicate amuse-bouche, followed by a luxurious Champagne crab bisque accented with cognac and a silky cream espuma. A petite Wagyu filet arrives with espresso butter, garlic spinach, and crispy leeks—an elevated nod to classic steakhouse indulgence.
The menu continues with maple-rubbed sea bass finished with an orange beurre blanc and cherry blossom dashi, offering a bright, elegant contrast. A slow 36-hour smoked and braised beef short rib follows, layered with depth and warmth alongside a tomato jalapeño purée and sweet corn–lime sauce. The experience concludes with a stunning white chocolate cake filled with strawberry-Champagne cream and topped with a pink velvet macaron—the perfect final note to welcome 2026 in style.
