Observations: Cheese (opened three days ago), chicken wings and sausage (opened five days ago) in walk-in cooler were opened but not date marked. Chicken wings (opened five days ago) and cheese in prep cooler were not properly date marked. White vinegar was stored on the floor in the dry storage area. Tootsie rolls, suckers and other candy items were stored on the floor near front storage area. Pizza plates had grease build-up and residual flour on them.

Observations: Manager was not aware of employee health policy. Gave manager the employee health policy and reviewed it with him. Slicers and can openers had old food debris on them. Sauces at pizza prep line and in prep cooler were not labeled with the common name. First aid for choking poster not posted in the dining area. Dishes were stacked while they were still wet. Equipment throughout the entire kitchen has an accumulation of food debris and dirt(cooler bottoms, gasket, crevices, sides of cold hold units, doors of cold hold units.)
