Dried Food Debris in Microwave, Meats and Cheese Not Date Marked and Other Violations

A look at recent Dacula area restaurant inspections.

  • Violation of Code: [.04(6)(f) ] Chicken salad and banana pudding above 41F. Both products discarded. All potentially hazardous foods must be stored at 41F or below.  Corrected On-Site.  New Violation.
  • Violation of Code: [.04(6)(g) ] Cheese and meats not date marked. Products made within the last 48 hrs so they were date mark. All potentially hazardous foods must be date marked and discarded within 7 days.  Corrected On-Site.  New Violation.

Observations and corrective actions:

  • Violation of Code: [.04(6)(d) ] Sauce cooling in the cooler above 70F after 2 hrs or more. Sauce discarded. All potentially hazardous foods must be cooled from 135-70F within 2 hours and from 70-41F within 4 hrs, for a total of 6 hours.  Corrected On-Site.  New Violation.

Observations and corrective actions:

  • Violation of Code: [.05(7)(a)1 ] Inside of microwave had food debris dried on upper surface. Microwave cleaned. All food contact surfaces must be kept clean to sight and touch.  Corrected On-Site.  Repeat Violation.
  • Violation of Code: [.04(6)(h) ] Turkey dated 9-7-13 not discarded. Turkey was discarded. All potentially hazardous foods must be date marked and discarded within 7 days.  Corrected On-Site.  New Violation.
  • Violation of Code: [.04(4)(u) ] Slaw and sauerkraut in container out for customers to serve themselves not protected from contamination. Container removed and placed behind counter so customers can not serve themselves. Food on display must be protected from contamination by using shielding, packaging etc.  Corrected On-Site.  New Violation.
  • Remarks: No food prepared during inspection. Make sure employees are not eating in the food prep area. Advisory on menu board with out reminders, but manager stated everything is fully cooked, do not do cooked to order. Food contact surface violation is a repeat violation if it occurs on the next inspection, facility subject to closure.
