Food Encrusted on Containers, Grease Buildup on Equipment and Improper Food Handling

Employee at one restaurant wipes down fryer then handles tortilla chips without changing gloves and an employee making pizzas at another restaurant touches trash can, pulls up pants and then starts bagging pasta without changing gloves.

  • Violation of Code: [.05(7)(a)1 ] Food encrusted on food containers that were stored clean. Items taken to the dish sink to be washed, rinsed, sanitized, air-dried. Equipment food-contact surfaces and utensils shall be clean to sight and touch.  Corrected On-Site.  New Violation.
  • Violation of Code: [.04(4)(l) ] Biscuits are stored directly on top of paper towel in the service line hot holding unit. Linens and napkins may not be used in contact with food.  New Violation.
  • Violation of Code: [.05(10)(a) ] Food containers were stacked wet nested on the dish shelves. After cleaning and sanitizing, equipment and utensils shall be air-dried.  New Violation.
  • Violation of Code: [.07(2)(m) ] Gap at the bottom of the kitchen exit door; needs door sweep. Outer openings of a food service establishment shall be protected against the entry of insects and rodents by solid, self-closing, tight-fitting doors.  New Violation.

A handwashing sink shall be maintained so that it is accessible at all times for employee use. A handwashing facility may not be used for purposes other than handwashing.  Corrected On-Site.  New Violation.
  • Violation of Code: [.07(3)(b) ] No paper towel at the prep area hand sink. Paper towel provided at the time of inspection. Each handwashing sink shall be provided with: 1. Individual, disposable towels; 2. A continuous towel system that supplies the user with a clean towel; or 3. A heated-air hand drying device.  Corrected On-Site.  New Violation.
  • Violation of Code: [.07(3)(a) ] No soap at the kitchen hand sinks. Soap provided at the time of inspection. Each handwashing sink shall be provided with a supply of hand cleaning liquid, powder, or bar soap.  Corrected On-Site.  New Violation.
  • Violation of Code: [.04(3)(l) ] New Zealand green mussel boxes/tags not kept for 90 days. Shellstock boxes/tags shall be kept for 90 days.  Repeat Violation.
  • Violation of Code: [.04(4)(d) ] Unlabeled containers of salt, oil, red wine. Food labeled at the time of inspection. Working containers holding food or food ingredients that are removed from their original packages for use in the food establishment, such as cooking oils, flour, herbs, potato flakes, salt, spices, and sugar shall be identified with the common name of the food.  Corrected On-Site.  New Violation.
  • Violation of Code: [.05(7)(d) ] Grease/buildup accumulated on the cookline equipment. Dust/buildup on the soda syrup rack & on the storage shelves. Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues  Repeat Violation.
  • Violation of Code: [.06(5)(k),(l) ] Wastewater leaking from the underside of the dumpster. Storage areas, enclosures, and receptacles for refuse, recyclables, and returnables shall be maintained in good repair.  New Violation.
  • Violation of Code: [.06(5)(o),(p) ] Missing drain plug on dumpster; a plastic bag is used inside the drain. Drains in receptacles and waste handling units for refuse, recyclables, and returnables shall have drain plugs in place.  New Violation.

  • Violation of Code: [.04(6)(i) ] Time control procedures not being followed, no pizza start or end times, no written documentation for pasta sauce under time control. Procedures written for pasta sauce, pizzas marked with time. If time is used as a control written procedures must be prepared in advance. The food shall be marked to indicate the time that is 4 hours past the time food is removed from temperature control.  Corrected On-Site.  New Violation.
  • Violation of Code: [.03(5)(g) ] employee preparing salads had a watch and a ring with a stone. Employee removed watch and ring. Employees preparing food may not wear any jewelry on the hands or arms other than a plain wedding band.  Corrected On-Site.  New Violation.
  • Violation of Code: [.04(4)(n) ] Employee making pizzas then touched trash can then pulled up pants then went to bagging pasta. Had employee stop wash hands and don new gloves. Gloves are for a single use only and once an interruption occurs or a new activity new gloves must be donned.  Corrected On-Site.  New Violation.
  • Violation of Code: [.05(3)(h),(i) ] No test strips available to test sanitizers. A test kit or other device that accurately measures the concentration of sanitizing solutions shall be provided.  New Violation.
