Deficiencies observed: Pizza sauce is held under time as a control without proper labeling or documentation in place. Pre-cooked pizzas are held under time as a control without being marked with the start and discard time on the rack. Alfredo sauce was left to cool down in the original pot in which the sauce was cooked. This sauce in the original pot was placed inside an outdoor walk-in cooler which is not functional. The unit is 78F inside. Discard the sauce due to the temperature violation. Boxes of frozen raw chicken are stored in direct contact with the floor inside the walk-in freezer. Package of pizza boxes is stored on shelf with food-contact surfaces exposed to contamination. Food handler is blowing into the gloves to open them. Shelving inside walk-in cooler unit is coated with food residue and debris. Small flies are breeding inside the floor drain underneath the compartment sink and underneath the dishwashing machine.

Deficiencies observed: Several food items found being cooled in sliding door cooler in tightly covered pans. The person in charge removed the tight plastic wrapping to allow for proper cooling. At the start of inspection employee observed cutting and prepping collard greens outside behind the facility. The collard greens were on a board on the ground waiting to be cut and were discarded at the time of inspection. Employee observed cutting the collard greens before being washed. The facility is reusing single use ice cream buckets to store additional food items after original use.

Chicken wings marked with incorrect date. Cheese marked March 21 still in use on April 8. Reinspection in 10 days.
