Deficiencies observed: Raw shrimp cooked to internal temperature of 143F. Eggs for immediate service, whole fish, whole beef, or whole pork must be cooked to an internal temperature of 145F or above for 15 seconds. The employee returned the shrimp to the wok until it reached 165F.

Deficiencies observed: Person in charge is unable to convey required knowledge of foodborne illnesses and associated symptoms, also reporting requirements to the health department. Review the employee health policy. Tongs, spoons, spatulas stored in tepid water at the front serving line. There are spoons holding in hot water at the steam table. The dumpster door is left open as well as the lid. Wet mops are resting down on the ledge of the mop sink basin. Food debris is scattered across the floor in the dry storage room: Rice and beans.

Deficiencies observed: Several items were accepted from delivery at the time of inspection and two items that had just been delivered and accepted were found to be out of temperature. These items including shell eggs and bean sprouts were removed and the delivery driver returned to pick up these items. Several raw meats found stored above ready to eat foods in the coolers. In the walk in cooler raw pork chops stored above whole watermelons, raw ground pork stored above mashed yams, raw steak stored above peeled potatoes, raw bacon stored above cooked sausage, and unwashed box of squash stored above ready to eat jello. Items including crispy wontons, seaweed, tofu, and ginger are being displayed for self service without being protected from contamination. A follow up inspection will be done within 10 days and a required additional routine will be done within 60 days due to score below 80.

Deficiencies observed: Large batch of smoked chicken is not cooled down below 70F within two hours. Smoked chicken was placed into a cooler which was not holding proper temperature. The smoked chicken did not cool down within the alloted time. Thick portion of cooked rice was placed into a freezer while the food was still too hot. The rice has caused all of the food inside the freezer to warm up. Other foods are no longer frozen solid. The most recent inspection report is not on display.
