Ruxbin Trio to Expand North to Wicker Park

The owners of a popular West Town restaurant will reportedly be opening another eatery farther north on Ashland Avenue, though details were still a bit hazy Thursday.

Owners of a popular area restaurant are hoping to spread their success a little farther north.

Ruxbin chef-owner Edward Kim, and co-owners Vicki Kim and Jenny Kim, will soon open a restaurant in a Wicker Park space at 1401 N. Ashland Ave. that used to be home to MC Bistro, according to a Chicago Magazine report.

The trio's current less-than 3-year-old restaurant at 851 N. Ashland Ave. is a few blocks south of the southern Wicker Park border.

The new venture had yet to be named Thursday, though reports suggest it will likely feature the same types of foods.

“It’s something that you roll up your sleeves for,” Vicki Kim told Chicago Magazine. “Guttural food. You just kind of get in there.”

Ruxbin menu items include pork loin with fried hominy, winter squash, kale and a tarragon broth; pork belly with cornbread, jicama, grapefruit, danablu cheese and citrus vinaigrette; and a pineapple upside-down cake made with coconut sorbet, cumin tuile, thai basil seeds and cured pecans, according to the restaurant's website.

Ruxbin's goal is identified as creating "food that goes back to the etymology of what a restaurant is meant to embody."

The West Town business seats about 32 people and boasts a "steam-punk" decor.

Though details had not emerged this past week regarding the Wicker Park site, Eater encourages hungry residents to "look for more casual and whimsical dishes" there, such as everything chicken wings.
