Ravenswood Couple Starts Stuffed Snacks Food Truck

Ravenswood residents Damian Warzecha and Jessica Whitney are starting a food truck featuring pierogies, the stuffed dumpling served with sauces.

Food trucks are popping up all over Chicago, but few venture up to the Lincoln Square and Ravenswood area. One local family is trying to change that.

Damian Warzecha, 26, and Jessica Whitney, 23, are starting a food truck called Pierogi Wagon, serving of course, pierogies.

Pierogies are dumplings that are boiled and seared after being stuffed with filling. They’re a natural choice for the couple’s heritage—Polish and Ukrainian—and the two have several family recipes.

The menu will change, but initial portions come in snack and regular sizes with options of beef, mushroom and kraut and potato and cheddar.

"We want to modernize them a little bit and serve them with a sauce like jalapeño aioli or applewood smoked bacon ranch and maybe even eventually expand into pierogi flavors like bacon and egg or chorizo," Whitney said.

The two currently own a marketing company, Whisk Social, and took to social media to help fund the food truck.

A Kickstarter campaign began April 10 and has a goal of $15,000 by May 20.  As of Monday, 64 backers have donated $2,321. Warzecha and Whitney are sweetening the deal by offering skip-the-line passes and free orders to donors.

With the wide variety of food on trucks in the city, Warzecha and Whitney will bring the first pierogi food truck to Chicago.

The two grew up in the food industry and met while working in the same restaurant.

"Hospitality is something unique and special. I'm really looking forward to meeting with people, greeting and talking with them, and serving them great food," Warzecha told Red Eye. "That's what it's all about. The vigor of street and crowds."
