Restaurant Corrects Violations after Cockroaches Found in Cooler

A local Mexican restaurant failed its initial health inspection because of three serious citations from the inspector.

Patch examined inspection reports in Lincoln Square during the month of February and March. Information has been compiled using publicly available data published to the website of the Chicago Department of Public Health's Food Protection Program.

Restaurants can pass, pass with conditions or fail using a standardized procedure. Establishments that pass don't have any critical or serious violations. Those that receive 'pass with conditions' had serious violations, but the violations were corrected during the inspection. Failed establishments had serious violations that weren't correctable during the inspection. A fail rating does not mean the business's license is automatically suspended.

All inspections are done on a routine canvass, unless otherwise noted.

Paciugo Lincoln Square, 2324 W. Giddings St.
Inspection date: March 14
Results: Pass
Violations: Management needs to sanitize the freezers, exterior of the ice maker, mop sink and floor at the rear storage area. The inspector also found stored items that weren’t at least 6 inches off the floor.

Rolls ‘N Bowls, 4635 N. Lincoln Ave.
Inspection date: March 14
Results: Pass
Violations: The inspector observed openings around the pipes near the ceiling at the rear mop sink area. Those need to be sealed. Management also needs to repair the leaking pipe under the three-compartment sink.

El Arco De Palmar, 3021 W. Lawrence Ave.
Inspection date: Feb. 25, March 5
Results: Fail, Pass
Violations: This visit was the result of a complaint. On a February visit, the inspector found five live cockroaches behind a door and two more in the reach-in cooler. A serious citation was issued. There was no certified food manager on site when the foods were being prepared and served. One must be on duty at all times so the inspector issued another serious citation.

Rusty, dirty shelves under cooking equipment must be cleaned and the plastic liner on top of metal storage racks must be removed. Management needs to detail clean the following: walls, floors, coolers, freezers, cooking equipment, fan cover and metal racks with rust and food debris. An exposed hand sink needs to be installed next to the three-compartment sink, whose faucet must be repaired and given drain stoppers.

The inspector found clutter in the rear storage room that wasn’t stored 6 inches off the floor, resulting in a third serious citation. Multi-use utensils and cleaning towels also weren’t properly stored. Management needs to replace broken gaskets on two doors of the reach-in cooler, seal raw wood shelves in the front service area and re-caulk around the exposed hand sink in the kitchen.

On  a follow-up visit March 5, the inspector didn’t find any cockroaches. All other violations were corrected.
