Melt. Brings Gourmet Grilled Cheese to Towson

The owners are planning to open the establishment in August.

An upcoming Towson eatery is looking to elevate a classic American dish—the humble grilled cheese sandwich. 

"I want to use my passion for food and put it in a vessel that people can afford right now," said Josh Gorub, an owner and chef at Melt.

The restaurant, which is slated to open in August at 22 W. Pennsylvania Ave., will feature sandwiches with various fillings such as carnitas inspired by Gorub's honeymoon in Mexico; fresh, house made mozzarella as a nod to his Italian heritage and "The Chessie," which includes jumbo lump crab, Old Bay remoulade and the Holland-based Beemster cheese. For those with a simple palate, classic grilled cheese is also on the menu. 

Melt. will regularly serve eight or nine signature sandwiches, ribbon or thin-sliced fries, two different soups daily and offer a create-your-own option. Menu items will range from $6 to $14. 

"Everything is made in-house," Gorub said. 

The restaurant management is also taking an unusual step to ensure that all its dishes are fresh. 

"There are no freezers or microwaves," Gorub said. "If it's not fresh, we don't serve it to a customer."

Additionally, Melt. will set aside a portion of its funds each month to benefit different local charities. 

"We want to serve our community," he said.
