Emma's Macarons To Open On Moody Street In Waltham

The shop's owner said she hopes to open sometime this spring.

WALTHAM, MA — A new macaron bakery is set to open in the space where Alba Mediterranean Market once was, between Gustazo and Kung Fu Tea on Moody Street.

On Feb. 6 the shop's owner installed a sign above the shop at 248 Moody St.

"We still have a long way to go before opening, but I am so grateful, thankful, blessed and all the other positive words to be able to say, we have a store," said owner Jeane Hoang.

Hoang said she hopes to open in a few months if all goes to plan.

Hoang told Boston Voyager Magazine in 2018, that she was inspired after trying her first French macaron at a coffee shop in Boston around 2013 and set to learning how to make them.

It wasn't easy, as French macarons are notoriously finicky to make. But she persisted.

By 2015 she posted to her Instagram account that the first batch was ready for sale.

She specializes in small batch, French macarons. Every batch is made to order, and she is known to combine unique flavors and customize macarons for special occasions, making macaron towers, cakes and special themed cookies.

This will be the first brick-and-mortar shop for the Quincy-based baker. Alba closed at the beginning of 2020, after five years in the space.
