The Egg &amp; I is set to open April 29, and managers <a href="http://www.theeggandirestaurants.com/EmploymentApplication.pdf" rel="nofollow" target="_blank">there are starting to recruit employees for the new restaurant</a>, which would be the second one in the franchise to open in the St. Louis area. News first broke about the restaurant, which generally closes mid-afternoon each day after the lunch rush, in January.
