Gingerbread for Houses: a Ritz-Carlton Recipe

The gingerbread recipe used to create the holiday gingerbread scenes at the Ritz-Carlton, St. Louis.

Gingerbread for Houses

Ingredients

  • Honey — 1/2 cup  
  • Water — 3 tablespoons
  • Sugar — 1/2 cup 
  • Eggs — 1 whole
  • Sugar — 1 tablespoon
  • Baking soda — 1 1/2 tsp. 
  • Milk — 3 tablespoons
  • Water — 1 tablespoon
  • Baking powder — 1 1/2 tsp.
  • Ginger — 1/4 cup
  • Cinnamon — 3/4 tsp
  • All-Purpose Flour — 5 cups

In a small sauce pan melt together the honey, 3 tablespoons water and 1/2 cup sugar. 

In a mixer whip together the egg and 1 tablespoon sugar. Into egg mixture add baking soda, milk, water, baking powder, ginger, cinnamon and flour.

Add the honey mixture.

Mix until a dough forms. 

Refrigerate until ready to use.
