Tod Mott Reveals Timeframe for New Seacoast Brewery

The building permit application is scheduled to be submitted on Friday.

Tod Mott, owner of the new Tributary Brewing Co. in Kittery, Maine, said his new brewery could open by Memorial Day.

Mott said he will submit his building permit application to the Maine Fire Marshal's office on Friday. If approved, he said it will take another five months to build out the new brewery, located on Shapleigh Road next to the Post Office.

Mott was at Redhook Brewery in Portsmouth Thursday for the tapping of his new Mottzenbock craft beer, which was well received by those who sampled it.

Mott said when the new brewery opens, his wife will serve as business manager and he will hire a full-time assistant to help him brew his new craft beers.

He said dividing walls will be put up to separate the brewery and warehouse storage from the rest of the building and a new natural gas line will be installed for the steam generator and the boiler.

The new brewery will not serve food, but will have a tasting room where Mott hopes most of the sales will take place. He said 40 percent of the sales that happen in small breweries happen in the tasting rooms.

Earlier this year, the Vida Verde food truck operated out of the post office parking lot where Mott's new brewery is located.

Mott was the former head brewer at the Portsmouth Brewery before resigning last year. He announced in October that he would be opening a new brewery.
