Gregorys Coffee (the chain deliberately does not use an apostrophe) was founded in NYC by New Jersey native Gregory Zamfotis. According to a press release, he wanted to "disrupt" the retail coffee industry and allow consumers to "see coffee differently." For Gregorys Coffee, this means brewing coffee every 30 minutes, baking fresh pastries in-house daily, pouring custom latte art for customers, and serving dairy-free milk alternatives at no additional cost.
