The parent of a child with celiac disease asked him to create a green, gluten-free bagel for her son. It was a request he couldn't pass up.

“Hear me out. I’m not a fan of doing colored bagels but a parent reached out to me asking if there was any way I could do a green, gluten-free bagel for her celiac son to fit in tomorrow at school. I’ve put them up under specials on our menu. These need to be pre ordered today for tomorrow, as I need to control the waste level. Ordering is live now.”
