Queens Eats: Baguette with Fresh Mozzarella, Tomatoes and Basil

After recently gorging on all varieties of food during the July 4 weekend and on vacation in Cape Cod a few weeks earlier, I began to crave something lighter.

So, when I woke up tired and not wanting to venture too far from home last weekend, I decided that a picnic seemed like a fine idea. And what better to serve at a picnic than a tasty yet simple sandwich?

This sandwich is easily assembled and packs a wallop of flavor. Serve with a fruit salad (I made mine with strawberries and blueberries) and you are all set for a relaxing jaunt to the park.

Baguette with Fresh Mozzarella, Tomatoes & Basil

Ingredients

1 baguette
3-4 Roma tomatoes
1 container fresh mozzarella cheese
2 handfuls of fresh basil
Salt, pepper and olive oil

Directions

1. Slice baguette in half

2. Drizzle with olive oil, salt and pepper

3. Slice tomatoes and fresh mozzarella, place on one side of baguette

4. Tear basil into smaller pieces, place on top of tomatoes and mozzarella

5. Sprinkle with salt and pepper

6. Cover with other half of baguette, slice sandwich into smaller pieces
