Proper Weekend Opening for Proper Pig BBQ in Lakewood

When The Proper Pig Smokehouse opened its new Lakewood location to the public on Friday at 4pm a line quickly formed out the door and on to the sidewalk outside the storefront at 17100 Detroit Ave.

Lakewood Patch paid the new Proper Pig location a visit on Saturday and co-owner, Shane Vidovic was busy taking orders and slicing the brisket. The restaurant quickly sold out of 500 lbs. of smoked meat their first day open and Vidovic told Patch that they prepared 800 lbs of meat for Saturday because they were also serving BBQ at the Cleveland Flea that day. He estimated that they would go through 2,000 lbs. of meat by the end of the weekend.

The Proper Pig serves Central Texas style BBQ which means the meat is seasoned with salt and pepper and the sauce is on the side. We chose the beef brisket, fortunately, Vidovic was pulling the last brisket out the warmer and he began slicing it up for sandwiches. The new Lakewood location can seat up to 50, but we chose to get our BBQ to-go and enjoy it at Lakewood Park's Summer Solstice Steps.

The Proper Pig also has a food truck and Vidovic told Patch that we can expect to see it this summer at the Lakewood Summer Meltdown.
