ST. THOMAS, USVI — Fungi, a dish native to the Virgin Islands, got the star treatment in the New York Times Food Section this weekend. The article digs deep into the roots of funghi, going all the way back to the dish's origins as an ingenious way for enslaved Africans to stretch their small rations of corn flour and cassava.

Several local restaurants get a call out for keeping funghi on the menu, including Petit Pump Room, De' Coal Pot, Gladys' Cafe and My Brother's Workshop Cafe and Bakery.

Check out the full story here. And don't miss the recipe the Times published alongside the article. Though odds are most people from the Virgin Islands have an even better recipe of their own.
