Foods Kept Past Discard Dates: Vienna Restaurant Inspections
August inspections uncovered violations like food kept past the discard dates and cold cheese measured above 60 degrees.
VIENNA, VA — As the Fairfax County Health Department regularly inspects restaurants in the Town of Vienna, we continue to look at the latest inspection results.
The health department's environmental health staff inspect over 5,200 restaurants and other retail food service establishments in Fairfax County and cities of Falls Church and Fairfax to ensure safe food handling practices are followed. This includes proper sanitation, food storage and preparation, and adequate kitchen facilities. Aside from restaurants, staff inspect child care centers, hospitals, school cafeterias, and temporary food service vendors at festivals.
Residents can search for a specific restaurant or browse a map of inspected locations through the online database. The health department cautions residents that multiple inspection reports should be used to evaluate a restaurant rather than a single report.

- The following refrigeration unit is not operating properly and is unable to maintain cold food at or below 41F: Three-door TRUE reach-in refrigerator in the food prep area.
- Observed that the wall at the kitchen hand washing sink physical is not maintained in good repair
- Food stored on the floor and/or food stored less than 6 inches off the floor. Food supply observed on the floor in the dry storage area and in the walk-in refrigerator.

- The following food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device: Whole milk =58F.
- The following refrigerated, ready-to-eat, time/temperature control for safety food that is prepared off-site at a commissary in Maryland, is not properly date marked to discard within 7 days. Observed dates marked to exceed 10 days of holding periods.
- The food temperature measuring device is not accurate in degrees F. The food thermometer tested was observed to be inaccurate, and was 7 degrees off intended range.
- Wet wiping cloths used for wiping counters and other equipment surfaces were observed stored on the counter.

- The following food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device: Roasted cherry tomatoes=43F, lemon curd=43/46F, @ Traulsen 2-door upright refrigerator.
- Raw animal food storage, preparation, holding or display conducted in a manner that may cause cross contamination of ready-to-eat food as follows: raw meat was found Torten above sauces, in the walk-in refrigerator.
- The following cheese is packaged using a Reduced Oxygen Packaging process, but the food establishment has not implemented a HACCP plan: BLUE CHEESE, RICOTTA SALATA.
- Observed the following ready-to-eat, time/temperature control for safety food being held for more than the specified time/temperature allowed: Several prepared food items were observed held beyond their end or use-by-dates, in the walk-in refrigerator. These include the following : Cilantro Dip;6/26/24; Tzatziki sauce=7/31/24; cranberry Campotz =6/28/24, cooked artichokes=7/9/24, Aioli=7/31/24; Zangrita=7/31/24, etc.
- The following refrigerated, ready-to-eat, time/temperature control for safety food that is prepared on site is not used or discarded within 24 hours of preparation and was not observed to be date marked: Several foods that were prepared on site were not marked with dates to shows preparation or use-by-dates. These were observed in the prepared foods walk-in refrigerator. All of the items were ordered to be discarded and were discarded during the inspection.
- The food-contact surfaces of the following equipment and/or utensils are not finished to have a smooth, cleanable surface: The interior stainless steel panel on the left door of the Truelsen refrigerator that is located near the front entrance to the kitchen, is missing.
- Milk crate(s) found used for the following purpose(s): As racks to elevate food supplies above the floor in the walk-in coolers no in dry storage areas.
- Food stored on the floor and/or food stored less than 6 inches off the floor inside the walk-in refrigerators.

- Working containers of poisonous and toxic materials are not properly labeled with a common name. Unmarked spray bottle containing cleaning chemical solution was observed in the kitchen.
- Wet wiping cloths used for wiping counters and other equipment surfaces were observed stored on the counter. Wet wiping towels were observed stored on top of the ware washing machine and not in sanitizing solution after each use as required.
- Employees observed wearing jewelry on their arms and hands while preparing food. Employees were wearing watches and wrist bands in the food preparation areas.
- The following food items that are not easily identified by appearance were observed without a label: Unmarked containers of various spices were noted on the cook-line without labeled.
- Observed that the floor under the upright refrigerator and upright freezer is in need of cleaning.

- Employees observed working in the food service area without proper hair restraints. A food employee was observed working in the food service area with longbeard without beard net.
- The following food items that are not easily identified by appearance were observed without a label: Squeeze bottles containing a variety of sauces.
- Observed that the floor under the dunnage racks in the dry storage room located around the corner from the walk-in refrigerator is in need of cleaning.
