Grease Dripping On Clean Pans Among Violations At Vienna Restaurant Inspections

Inspections in September and early October found violations like an ice machine without a lid exposed to possible contamination and more.

VIENNA, VA — As the Fairfax County Health Department regularly inspects restaurants in the Town of Vienna, we continue to look at the latest inspection results.

The health department's environmental health staff inspect over 5,200 restaurants and other retail food service establishments in Fairfax County and cities of Falls Church and Fairfax to ensure safe food handling practices are followed. This includes proper sanitation, food storage and preparation, and adequate kitchen facilities. Aside from restaurants, staff inspect child care centers, hospitals, school cafeterias, and temporary food service vendors at festivals.

Residents can search for a specific restaurant or browse a map of inspected locations through the online database. The health department cautions residents that multiple inspection reports should be used to evaluate a restaurant rather than a single report.

Violations:

  • Observed that poisonous and toxic materials are not properly stored to prevent the contamination of food, equipment, utensils, linens or single service items.
  • Food employees were observed cleaning their hands in a food preparation sink, and in a ware washing sink.
  • The nonfood-contact surface of the following equipment is not corrosion resistant, nonabsorbent, and/or smooth: Cardboard liners at the chemical storage cabinets are absorbent not easy to clean and are very soiled.
  • Observed that sign or poster that notifies food employees to wash their hands is not provided or is not clearly visible at all handwashing sinks used by food employees.
  • The following food items that are not easily identified by appearance were observed without a label: Bulk flour and spice in large clear plastic containers were not labeled to identify contents.

Manhattan Bagel: 310 Maple Ave, Vienna, Va 22180

Violations:

  • Milk crate(s) found used for the following purpose(s): Used as racks to elevate food supplies in the walk-in freezer.

Panera Bread: 136 Maple Ave., Vienna, Va 22180

Last inspection: Sept. 25

Violations: No violations found.

Pure Pasty: 128 C Church St., Vienna, Va 22180

Last inspection: Sept. 24

Violations:

  • When tested, the quaternary ammonium compound-based sanitizing solution was observed to be at a concentration less than what is required for effective sanitization of food-contact surfaces of equipment and utensils. Observed the sanitizing solution in the 3-compartment sink with a concentration of 100 ppm total quaternary ammonium compound.
  • Observed that the grease trap lid is very rusty and crusted.
  • Observed that the floor around the grease trap and under the 3-compartment sink is in need of cleaning.

Cafe Renaissance: 163 Glyndon St., Vienna, Va 22180

Violations:

  • Observed that paper towels were not provided at each handwashing sink.

Taco Bamba: 164 Maple Ave, Vienna, Va 22180

Last inspection: Oct. 4

Violations:

  • When tested, the low temperature, chemical sanitizing warewashing machine was observed with a sanitizing rinse concentration of less than 50 ppm chlorine
  • solution.
  • The door gaskets of the following unit(s) are (missing, damaged): rubber gaskets on doors of cookline refrigerators were noted to be torn and need to be repaired or replaced.
  • Surfaces of the can opener blade were in contact with non-time/temperature control for safety food items that were observed soiled with accumulations of grime and debris.
  • Milk crate(s) found used for the following purpose(s): observed several milk crates used as racks to elevate supplies above the floor.

The Sandwich Shop: 132 Church St., Vienna, Va 22180

Last inspection: Oct. 8

Violations:

  • The food-contact surface of the following equipment contains cracks, chips, or pits and can not be easily cleaned: two rubber spatulas noted to be broken.
  • Observed that two overhead metal shelving above the three-compartment sink are very rusty and need to be resurfaced or replaced.
  • Wet wiping cloths used for wiping counters and other equipment surfaces were observed stored on the counter.

Vienna Inn: 120 Maple Ave., Vienna, Va 22180

Last inspection: Oct. 16

Violations:

  • The lid for the ice machine is completely broken and detached from the machine, exposing the ice to possible contamination.
  • Plumbing connections under the piping at the walk-in freezer condenser/motor unit are leaking.
  • Food storage under leaking water lines behind the condenser in the walk-in freezer.
  • Openings to the exterior of the building are present along the base of the side door to the ice machine room.
  • Openings to the exterior of the building are present along the base of the door from the dry ice machine room.

Bear Branch Tavern: 133 Maple Ave, Ste# 100, Vienna, Va 22180

Last inspection: Oct. 16

Violations:

  • Ice used as a medium for cooling the exterior surfaces of employee canned beverage is also for beverage ice or used as food.
  • Raw animal food storage, preparation, holding or display conducted in a manner that may cause cross contamination of ready-to-eat food as follows: raw fish observed stored over RTE chicken tenders; raw chicken observed stored over cooked chicken wings in 1 Door Upright refrigerator near hot oil fryers.
  • Observed the following ready-to-eat, time/temperature control for safety food being held for more than the specified time/temperature allowed: Bloody Mary mix, ice cream batter kept in bar fridge dated for 10/4/24, past 7 day expiration.
  • The following raw and/or undercooked foods are provided on the menu, menu board, table tent or brochure without a reminder statement: seared ahi tuna, eggs cooked any style.
  • The tags for the molluscan shellfish are not being retained for 90 days in an organized manner to facilitate identification.
  • Reduced oxygen packaged(ROP) tuna steaks observed.
  • Observed that sign or poster that notifies food employees to wash their hands is not provided or is not clearly visible at handwashing sinks used by food employees at the bar areas.
  • Grease from the exhaust hood system at the cook line was observed dripping onto clean pans stored below.
  • The following food items that are not easily identified by appearance were observed without a label: white wine, vegetable oil, olive oil AND salt, sugar at cook line.
  • Dispensing and/or in-use utensils improperly stored between use as follows: Scoops for dry foods such as lentils observed with non-handled containers for scooping.
