Group Behind Café Hollander Plans Supper Club Concept For Greenfield

GREENFIELD, WI — The restaurant group that brought Cafe Hollander to locations across the Milwaukee area is planning a new supper club concept in Greenfield that features a "northwoods" feel.

The supper club, dubbed The Feisty Loon, would come to the corner of 84th Street and Layton Avenue alongside a new Cafe Hollander location. The proposal also calls for a green space in between both restaurants featuring its own bar and room for events, leaders behind the project told the Greenfield Plan Commission on Aug. 9. The new plans come as revisions to what has been known as "The Lokal."

The concept comes as part of Cobalt Partners' 84 South Development, which began in 2015 with the construction of several retail outlets and restaurants. The earlier plans for The Lokal called for a brewery and a coffee shop alongside outdoor seating in 2021 but never made it forward, according to city documents.

The new Cafe Hollander would be the sixth of its kind from the Lowlands Group, known for its Amsterdam-styled eateries dotting the Milwaukee area from Mequon to the East Side, Third Ward and Bayview. Eric Wagner, the CEO of the restaurant company, told the plan commission that the supper club would be his group's eighth restaurant. The green space will fall between both of the restaurant buildings, which will both be stylized to match their inhabitants.

"We envision it as a very real gathering place for the community and hopefully a place people come before and after dinner," said Wagner at the meeting. "They could spend several hours there and even bar hop along the way."

The supper club could feature more of a midcentury modern architectural style with landscaping elements such as pine trees, stone landscaping and a pond, according to Matt Friedrich, one of the architects for the project from The Kubala Washatko Architects. The Cafe Hollander plans to feature an Amsterdam canal architectural style, consistent with other locations.

Both restaurants will have patio space facing the green area, according to initial concept plans. That outdoor space could be used for an outdoor beer garden, concerts, croquet, and more, according to Wagner. Friedrich said there is a possibility of bringing a stage in.

The new concept for the Feisty Loon will feature supper club staples such as prime rib, but Wagner said it will also be a place where "people are comfortable in jeans and a t-shirt ordering a burger."

Wagner called it a "younger more fun cousin of Buckatabon," which is Lowlands' supper club concept in Wauwatosa.
