The Green Beanie Goes Caribbean

Working with some local ingredients, The Green Bean cooks up a wild rice and seafood dish with "jerk" seasoning.

From the Caribbean still cooks up something for us. From The Green Beanie herself:

“This week The Green Beanie goes to St. Lucia to put together an improvised dish using some stuff found there. In the end, I end up with a wild rice mix with a bunch of spices and other things, a mix of vegetables, seafood, plantain, and more seasonings, a scallop seasoned with a 'jerk' spice, and a few very thin slices of coconut.
