DEL MAR, CA — Tocaya Organica, a modern Mexican restaurant specializing in vegan, vegetarian and gluten-free options, is opening its newest location Wednesday at One Paseo in Del Mar.

The grand opening will be from 11 a.m. to 9 p.m., at 3725 Paseo Place, featuring a Barrio fruit cart, live entertainment, giveaways, food specials and a vintage VW bus photo booth on-site.

The Southern California-based eatery's forte is a push for "healthy food choices" rooted in traditional Mexican recipes with accommodations for a variety of dietary preferences ranging from vegan and gluten-free to vegetarian and KETO in its various salads, bowls, burritos and tacos. Each dish "starts vegan" with options for protein and dairy additions, if desired.
