Skynny Kitchen Owner Talks Under 500-Calorie Menu

The eatery will focus on light wraps, salads and other dishes.

Ever tried a panini-pressed bison wrap?

It's one of the dishes from a menu of under 500-calorie options Skynny Kitchen plans on serving once it opens in the NoHo Arts District in April.

"Bison is actually leaner than turkey, but you still get kind of a beef flavor from it," said owner Matt Flinn.

Flinn, who's worked as a private chef and cooking instructor, says his on the go career prompted him to pursue a dining venture that offered alternatives to fast food.

"I wanted to create something that anyone could go to have something healthy and quick . . . I want [the food] to be delicious and satisfying," he said.

Among the breakfast, lunch and dinner selections, some signature Skynny Kitchen dishes are slated to be the black bean vegetarian burger and low-sugar smoothies that are packed with protein powder and weight in at about 210 calories.

Many yolks are to be ditched as egg whites will be used as an ingredient.

"We're not frying anything," Flinn added.

Skynny Kitchen will open at the former site of Otis Jackson's Soul Dog at 5166 Lankershim Blvd. Patch will keep you posted when the eatery sets an opening date.
