
As the carrier of a diabolical sweet tooth, I've slipped into Republic of Pie on a few occasions for a slice of pie.
On my most recent visit, I bumped into head pie chef Mario Valdez who revealed to me the most popular flavor: the classic chocolate cream pie.
"It's made with four kinds of chocolate," said Valdez, who's been on the job for seven months.

One of the best perks of his gig is tasting pies--a lot.
"I love it, every day man," Valdez said. "I always get to try all kinds of pies."

The only drawback is putting on a few pounds.
"Yeah, I can tell," he said. "It's kind of hard not to taste the pies when you're making them in the kitchen."
