Ask people about kombucha and you’ll hear, “I drink it everyday, I’m obsessed!” or “kombu…what?” The effervescent non-alcoholic drink has originated in China around 2000 B.C., and more recently has become the drink of choice for the health conscious crowd. Once found only in bottles at speciality health food stores, it’s now on the shelves of major grocery stores and even sprouting up in Target, Costco and drugstores. The newest way to consume it locally is on tap.

Next to beer taps at Temecula’s EAT Marketplace and Bushfire Grill you’ll see GT’s Synergy non-alcoholic kombucha on tap. At Organic Roots grocery store there’s a selection of six kombucha flavors on tap in the juice bar. Kombucha can be drank alone, added to juices or smoothies or even mixed in cocktails or with beer, in what’s called a beerbucha.
