Plant-Based Restaurant Fellow Traveler To Open In Englewood

LITTLETON, CO — After five years of working to fulfill a dream to open a plant-based bar and cafe, Fellow Traveler is officially opening its doors on Friday evening.

"Me and my partners had this dream a long time ago to set this thing up, had a few near misses with some other properties and businesses that we were thinking of buying but it all fell through," Joe Phillips, the owner of the Fellow Traveler said.

"And then we found this spot in Englewood and we were set to open in June of 2020 and then COVID hit and we lost our bank loan and basically everything stopped."

Not to be deterred, Phillips and his partners "sold our homes and borrowed some money and got it all put together."

Though a significant component of Fellow Traveler is its vegetarian kitchen, Phillips' focus is on the bar and his thoughtful selection of globally-influenced alcohols.

"We have a vegetarian kitchen," Phillips said, "but first and foremost, this is a bar with a well-curated wine and spirit selection with a lot of influences from around the world, specifically Italy and Spain."

With a goal to source as many ingredients as possible from local, sustainable sources, Phillips is also working to "develop relationships with more local farms."

With an official opening finally in sight, Phillips remains set on ensuring that his bar will provide a good experience to all.

"Our goal was always to be able to give a quality experience to everyone regardless of price point," Phillips said. "My goal is always to have a $3 beer and a $40 bourbon available. A welcome place for all, basically."

Fellow Traveler is located at 3487 South Broadway and opens at 5 p.m. on Friday.
