
Norm Johnson and Kris Hall are busy working at the former Hub Bar and Grille building on Route 44, with plans to open a new restaurant later this summer.
The two are hoping to open Smokin Spokes Bar and Grill some time in August and right now are busy cleaning, painting, revamping and obtaining some new equipment and necessary permits.
The idea is to offer lunch and dinner and specialize in food such as chicken wings, salads and burgers. Smoked meats will be another specialty, including as pizza toppings.
"The menu will begin with really good basic food," Johnson said. "I'll build it as we go."
Johnson has been a chef for nearly 20 years and worked in several parts of the country, including California, before returning to his native Connecticut about 8 years ago. Hall has owned other businesses but this will be his first restaurant.
As the name implies both owners are passionate fans of motorcycles, a theme that will be evident in the building and through special fundraising events.
"We're going to have decor fashioned after our passions — bikes, burgers and beer," Johnson said.
However, he also said the restaurant will be a welcome atmosphere to non-riders and families.
The two are still sorting out hours and other details but plan to open for lunch and dinner. They are looking to have live music on Friday nights, a disc jockey on Saturdays and likely amateur days on Sundays.
