
Stockbridge's Bakery & Cafe is well known for its cheesecakes. In fact, the business at 509 Howe Ave. in Shelton has won Connecticut Magazine's Best Cheesecake category 10 years running.
On Friday afternoon, owner Lisa Stockbridge answered a few questions about cheesecake.
How many varieties of cheesecake do you make?
Stockbridge: We have over 50 varieties of cheesecake and also serve breakfast, lunch and dinner.
What are your three best sellers?
Stockbridge: The original, White Chocolate Raspberry and Amaretto.
What's the most common mistake people make when baking a cheesecake?
Stockbridge: Not baking it in a water bath. You fill a bigger pan with water and put the other pan inside it.
Without the water bath, a cheesecake will crack.
