The IRONS Restaurant Names Jesse Jeznach Executive Chef

The IRONS Restaurant & Bar at Hilton Mystic today announced Jesse Jeznach has been named Executive Chef.

Chef Jeznach has a diverse culinary background including Tuscany, Rain and Fidelia’s at Mohegan Sun, Sous Chef at a small café in Norwich, Conn., Anthony J’s Bistro in Mystic, and Executive Sous Chef at Captain Daniel Parker Inne. He served in various chef positions at Foxwoods’ Aldente, Cedars, Paragon, and Veranda.

“I find that cooking doesn’t need to be over complicated,” said Chef Jeznach. “Proper balance of flavors and ingredients, along with appropriate technique will get you where you need to be every time, and technique doesn’t really change depending on what style you are cooking. Simplicity will always be the key.”

Chef Jeznach’s father was a chef before he made the jump to information technology in the late 70’s.

“My father retained a passion for cooking, and taught it to me,” said Chef Jeznach. “When my friends were watching cartoons on Saturday morning, I was watching Julia Child, Jacques Pepin, and Nick Stalino.”

Chef Jeznach and his father cooked together often, and when he was twelve started helping out with small catering gigs.

“By the time I was fifteen, we were using my recipes,” said Chef Jeznach. “I was choosing product and negotiating with butchers and fish mongers.”

These days, his favorite dishes to create include BBQ, braises, and slow roasts.

Chef Jeznach is originally from Vermont and now resides in Norwich, Conn.
