First Watch, Bubbaque's, Kampai Cited For Restaurant Violations

One-hundred-thirty-seven restaurants out of 556 in Hillsborough County failed inspections in the last 30 days, according to the state.

BLOOMINGDALE — RIVERVIEW, FL — One-hundred-thirty-seven restaurants out of 556 in Hillsborough County failed its first inspections in the last 30 days, the Florida Department of Business and Professional Regulation said Tuesday.

Some of those restaurants in Riverview had more violations than others. Listed below are the Riverview restaurants cited for violations. The high priority items are included from the inspector's notes:

First Watch Restaurant #164, 13013 U.S. Highway 301, Riverview, had 13 violations March 10

  • High Priority—Employee washed hands with cold water. Sink water only reaching 74 °F. Observed employee washing hands in handwashing sink with cold water. Employee then handled clean scoop to scoop potatoes on to the flat top grill. Discussed the importance of washing hands in sink with cold water.
  • High Priority— Ware washing sanitizing solution exceeding the maximum concentration allowed. Chlorine tested at 200 PPM at Dish machine.
  • High Priority—Raw animal food stored over ready-to-eat food. Raw pork over smoked ready to eat salmon in walk-in cooler.
  • High Priority —Food-contact surfaces sanitized with a quaternary ammonium solution not exposed to the sanitizer solution for at least 30 seconds. Do not use equipment/utensils not properly sanitized. Observed employee placing soup bowls into quaternary ammonia sanitizer and immediately removing bowls from sanitizer and placing onto drying rack. Dishes were exposed less than the required 30 seconds. Discussed with employee that dishes sanitized with quaternary ammonia sanitizer are required to be left in sanitizer for 30 second minimum. Employee began letting bowls soak in sanitizer.

First Watch Restaurants, Inc. 11220 Sullivan Rd., Riverview, had 13 violations March 16

  • High Priority—In-use utensil stored in unclean water at or above 135 degrees Fahrenheit. Utensils on cooks line in water at 40° and 85°. Inspectors advised manager of correct temperature and added details.
  • High Priority —Live, small flying insects in kitchen, food preparation area, food storage area and/or bar area. 2 live flies in kitchen. Ok per Jessica next unannounced inspection.
  • High Priority—Toxic substance/chemical improperly stored. Chemical bottle stored next to napkins.
Bubbaque's #7007, 9990 S. U.S. Highway 301, Riverview, had 18 violations February 26
  • High Priority - Employee failed to wash hands before putting on gloves to initiate a task working with food. Observed employee soil gloves by pushing trash down in the trays can. Employee then changed gloves and began cutting ribs. No handwashing occurred in between soiling old gloves and dawning new gloves.
  • High Priority - Vacuum breaker missing at hose bibb under hand wash sink in smoker room.
  • High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Cooked chicken wings 44 °F. Re temped at 35°F. Raw chicken 44 °F. Re temped at 31 °F.

Kountry Kitchen, 514 S Highway 41, Ruskin, had 29 violations March 2

  • High Priority—Dented/rusted cans present.
  • High Priority—Dish machine quaternary ammonium sanitizer not at proper minimum strength. Discontinue use of dish machine for sanitizing and set up manual sanitization until dish machine is repaired and sanitizing properly. Discussed with orator that they need to set up three compartment sink to clean dishes.
  • High Priority—Food-contact surfaces not sanitized after cleaning, before use. Do not use equipment/utensils not properly sanitized. Employee washing dishes and not sanitizing them afterwards. Discussed the proper use of sanitizer when doing manual ware washing.
  • High Priority—Operating with an expired Division of Hotels and Restaurants license.
  • High Priority—Raw animal food stored over ready-to-eat food. Raw shell eggs over pancake batter. Discussed proper storage with operator.
  • High Priority—Roach activity present as evidenced by live roaches found. -Approximately 50 on wall and floor by handwash sink in kitchen. -Approximately 10 on wheel of reach in cooler in kitchen. -Approximately 19 on floor under reach in cooler in kitchen. -3 crawling on the back of the reach in cooler. -2 on the wall behind oven in kitchen. -Approximately 35 on wheel of small reach in cooler across flat top grill. - 2 inside the reach in cooler doors across from flat top grill. - 2 inside gaskets on reach in cooler, across from flat top grill. -Approximately 5 crawling on the wall next to flat top grill. -Approximately 16 on the backside of reach in cooler across from flat top grill. -Approximately 10 under prep table next to reach in cooler across from flat top grill. -2 live crawling around clean plate shelves. -5 on outlet behind reach in cooler. -2 live under bread heating unit in server area. -3 under handwash sink in drive through area. -2 live by soda rack in drive through area.
  • High Priority - Toxic substance/chemical stored by or with food. Mean green degreaser by sugar on prep table and over coffee.

Sushi Kampai, 10312 W. Bloomingdale Ave, Riverview, had 15 violations March 16

  • High Priority - Container of medicine improperly stored. Two bottles of vitamins stored over single service articles.
  • High Priority - Dish machine chlorine sanitizer not at proper minimum strength 0 PPM. Discontinue use of dish machine for sanitizing and set up manual sanitization until dish machine is repaired and sanitizing properly. Chlorine PPM 200
  • High Priority - Raw animal food stored over ready-to-eat food. Raw beef store over soy sauce. Operator corrected at time of inspection.
  • High Priority - Time/temperature control for safety food identified in the written procedure as food held using time as a public health control has no time marking and the time removed from temperature control cannot be determined. Sushi rice not time stamped at sushi bar area.
