- I. THE CEVICHE (Miami, 1980): Yellowtail Snapper, Coconut Leche de Tigre, Avocado Mousse, Chili Threads.
- II. THE BLACKENED (New Orleans, 1984): Scallops, Smoked Poblano Cream, Colab Farms Tomato Conserva.
- III. THE PRIMAVERA (The Garden Era): Hand-Rolled Tagliatelle, Colab Farms Zucchini, Blistered Tomato, Local Herbs.
- IV. THE STEAKHOUSE (The Standard): Chatel Farms Prime Filet, Sauce Diane, Winter Truffle, Pomme Purée.
