Polo Grill and Bar will “Let the Good Times Roll” during its 10th annual Shrimp Boil & Fish Fry

Chef Tommy Klauber and his good friend Spyder Broussard team up for 10th Annual Shrimp Boil and Fish Fry at Polo Grill and Bar.

It’s been a number of years since Polo Grill and Bar proprietor and chef Tommy Klauber worked in the Crescent City, but that doesn’t mean the sights and sounds of New

Orleans isn’t still a rich part of his life.

His good friend Spyder Broussard, a native of Houma, La., who also happens to be the uncle of his wife and fellow Polo Grill and Bar proprietor, Jaymie Klauber, is about as Cajun as you can get.

On July 15, Polo Grill and Bar, a Lakewood Ranch-based rrestaurant serving American cuisine with a global soul, will “Let the Good Times Roll” during its 10th annual Spyder Broussard Low Country-East County Shrimp Boil & Fish Fry. The event will be held from 6:30 - 11 p.m., at the restaurant at 10670 Boardwalk Loop in Lakewood Ranch.

For as long as they can remember, Tommy and Jaymie would host an authentic shrimp boil for family and friends at The Colony on Longboat Key. The cuisine coupled with the laughter and quality time they spent together served as inspiration for the annual event.

“It’s made an impression,” says Tommy. “People love it. People ask all the time about it.”

As in years past, newspapers and rolls of paper towels will don the tables as guests are encouraged to kick back and relax while celebrating the flair of the Crescent City. Large wooden bowls piled high with boiled shrimp, sweet corn, potatoes and Andouille sausage and kettles of seasonings are just the beginning of what Tommy, Jaymie and Spyder have planned for their 10th anniversary celebration.

In addition, this year’s menu once again features a wide variety of Cajun delicacies, including Gumbo Ya Ya Acadian with Popcorn Rice, fried catfish, Baked Oysters

Bienville, Cajun Ratatouille, Beignets du Monde and more.

Tommy also has a company in Lafayette, La., overnight him boudin sausage, a classic white Cajun sausage that’s often paired with rice.

“It’s a real Louisiana delicacy, and unless you’ve ever had it at our place or in Louisiana, then you’ve never tried this sausage,” says Tommy. “It’s just delicious. People go crazy for that, too.”

“We put a lot of special little details into the menu,” says Tommy. “They want to be authentic, but not completely authentic. We’re not sticklers, but we can still create a great product.”

The event will feature live music by the Gumbo Boogie Band, who will bring the zydeco sounds of New Orleans to Lakewood Ranch. Reservations for the event, which costs $37.50 per person, are required.

If you’ve never been to New Orleans, this event is sure to inspire you and leave you with a taste of what this entire cultural city has to offer. From the washboard sounds of the Gumbo Boogie Band to Cajun classics to an evening spent sitting around the table sharing laughs with family, friends and neighbors, the 10th annual Spyder Broussard Low Country-East County Shrimp Boil & Fish Fry has something for everyone.

“The zydeco sound is so fun,” says Tommy. “There’s a lot of smiling going on.”
