Pizzeria Gregario Now Open in Safety Harbor

The downtown restaurant serves homemade meatballs and sausage and offers a variety of wood fired pizzas, including a gluten-free pie.

Pizzeria Gregario, a new wood-fired pizza restaurant located in downtown Safety Harbor, recently opened for business.

The eatery, located at the southwest corner of Second Street North and Fourth Avenue North, offers a variety of pizzas cooked fresh in the on-site Italian oven, including a gluten-free pie.

In addition, Pizzeria Gregario serves house made meatballs and sausage, plus salads and desserts, and it has beer and wine as well.

"We opened slowly last Friday so we can make sure we have everything in order, but now we are ready to start going full speed ahead," owner and chef Greg Seymour said.

"The feedback has been great so far. People really like the food, especially the meatballs and sausage, which we make right here on site."

Seymour has stated he intends the restaurant to be as organic, green and healthy as it can be. 

That's why he offers a gluten-free pie and he uses distributors that sell grass fed and organic meat.

"I bought a 300-pound hog, which came from a farm in Brooksville, from Providence Cattle Company, and I made the sausage from that," Seymour said.

"I'm trying to do as much organic as I can now and then grow into it even more."

Seymour, who has extensive experience in the restaurant business and has learned how to make pizza from some of the best pizza chefs in the country, said he hopes to become an integral part of the community.

For instance, during this week's Third Friday, he will provide food for his neighbors, Safety Harbor Covenant Church, for the tent they are putting up outside.

"So far the response to what we're doing has been fantastic, and I just want to give back to the community," he said.
