Restaurant Inspections: Mold-Like Growth On Cheese

El Taco Veloz and Loving Hut in Sandy Springs both scored A's on their follow-up inspections.

The Fulton County Department of Health and Wellness conducted food service inspections Nov. 21-28 at the following establishments:

Breadwinner Bakery & Cafe (Food Service Inspections)*

View inspections: November 26, 2018 Score: 89, Grade: B

  • Observed items stored in front food service reach-in cooler failing to maintain temperatures of 41 degrees F or below (see temperatures observations). CA: Items were discarded onsite. All cold held items must maintained temperatures of 41 degrees F or below.
  • Observed potentially hazardous food held under time as a public health control noted in record without stating the initial temperature of items. CA: When potentially hazardous items use time as a public health control and are left out for a maximum of 4 hours, the starting temperature must be noted in records to ensure that items were maintaining temperatures of 41 degrees F or lower before time started. Items were discarded onsite.

  • Observed bare hand contact with ready-to-eat naan bread by employees and establishment has no approved Alternative Operating Procedure in effect. CA: Items touched were discarded onsite (cos). Food employees shall not contact exposed, ready-to-eat food with their bare hands and shall use suitable utensils such as deli tissue, spatulas, tongs, single-use gloves, or dispensing equipment.
  • Observed mozzarella cheese with mold-like growth stored in main kitchen reach in cooler # 2. CA: Item was discarded onsite (cos). Food shall be safe, unadulterated, and honestly presented.
  • Observed very low chlorine concentration of sanitizer used for dish machine. CA: Upon further observation, facility appears to be using a chlorine based detergent with a quat based sanitizing solution. Informed PIC that chemicals should not be mixed. Advised that facility switch to using only chlorine sanitizer.
  • Observed potentially hazardous Alfredo sauce thawed in an improper manner. CA: Item was placed in a refrigerator unit. Thawing must take place either in a refrigeration unit or under tepid running water.
  • Observed sink designated for vegetable prep being used to clean wet wiping cloths. CA: Vegetable prep sink must only be used for its designated purpose.
  • A follow-up inspection will be held Dec. 10.

  • Observed items stored in front food service prep-top cooler and drawer cooler failing to maintain cold holding temperatures of 41 degrees F or lower (see "temperature observations"). CA: Foods observed out of temp were past the point of intervention and were discarded onsite (cos). Food that are being cold held must maintain temperatures of 41 degrees F or lower.
  • Observed cooked pulled beef stored in front food service steam table not held at 135 degrees Fahrenheit or above. CA: Item was reheated to 168 degrees F and steam table was placed on a higher temperature setting (cos). Hot held foods must maintain temperatures of 135 degrees F or higher.
