• Violation of : 4-1A. Food separated and protected - Unwashed cucumbers stored over ready-to-eat vegetables. Cucumbers moved to shelf with other unwashed vegetables.

• Violation of : 2-1B. Hands clean and properly washed - An employee was observed putting on gloves without first washing hands. Corrected on site by having employee discard gloves, wash hands and don new set of gloves.

• Violation of : 6-1C. Proper cooling time and temperature - Several containers of cheese dip and refried beans were observed cooling for more than 24 hours with temperatures above 41 degrees in the walk-in cooler. Dip and refried beans were discarded.
