• Active Managerial Control measures are not satisfactory for establishment to be in compliance with code / CA: Persons in charge, managers or CFSM must be properly trained or retrained. Lack of active managerial control in the establishment as evidenced by critical violations.
• Observed one of the employee handling food without washing hands after coming from outside. When I was talking he just left the place.
• Hand wash sink not accessible for employee use at all times. Observed one of the hand sink in the kitchen blocked by containers and stool and the other sink by mop bucket. Hand sink has no paper towels. COS by making the sinks accessible and providing paper towels.
• Observed improper vertical separation of raw from raw foods and raw from ready to eat foods. COS by rearranging the foods based on final cook temperature.
• Observed foods stored in the kitchen and cooler left uncovered. COS by closing with lids.
• Observed prepared TCS foods onsite not date marked. COS by writing dates. Per the chef, everything was prepared on Dec. 10 and Dec. 11.
• Observed food container not properly labeled. Observed foods such as salt, sugar, not labelled. Must label the items that are not easily identifiable.
• Observed shrimp and pork being thawed in standing water at room temperature. Cos by keeping the meat in the walk in cooler. Must always thaw in the cooler, under running tap water, in the microwave, or as a part of the cooking process.
• Observed left over food not transferred to a food grade container after opening the cans. Once the can is opened always transfer the left over food to a food grade container. Observed disposable dishes and regular dishes in the flour bin. Must use scoops with handles.
• Must get the lights fixed in the back area of the kitchen where the reach in freezers are.
• A follow-up inspection was scheduled, but no date was provided.
