  • Violation of Code: [.03(5)(j)1&2 ] Employee eating in the kitchen & drinking from an unapproved container. Informed employee not to eat in the kitchen & to drink out of an approved container. Employees shall consume food only in approved designated areas separate from food preparation and serving areas, equipment or utensil areas and food storage areas. However, drinking from a single service beverage cup with a secure lid and straw that is handled to prevent contamination of the employee’s hands, the container, exposed food, clean equipment, utensils and linens, unwrapped single-service and single-use articles will be allowed.  Corrected On-Site.  New Violation.
  • Violation of Code: [.04(4)(c)1(i)-(iii),(v),(viii) ] In walk in freezer: cooked shrimp stored with raw shrimp; raw chicken stored above raw beef; raw beef stored above raw seafood. Items rearranged properly in the freezer. To prevent cross-contamination, raw animal foods shall be separated based on a succession of cooking temperatures. Raw seafood, raw meats must be stored separately and below any ready to eat food. Raw produce that is washed must be stored above unwashed produce.  Corrected On-Site. New Violation. 
  • Violation of Code: [.05(6)(q) ] Ambient air of walk in cooler at 50 deg. F (food was fine). Temperature adjusted, but only dropped to 43 deg. F. Potentially hazardous food transferred to a working cooler. Ambient air of cooler must be at 41 deg. F or less. WILL RECHECK IN 3-10 DAYS TO ENSURE COOLER IS REPAIRED.  New Violation.   
  • Went over proper cleaning of tables with staff. Provided rule. Had facility DISCARD garlic in oil. Made in house and stored at room temperature. Had one employee remove bracelet.

Observations and corrective actions:

  • Violation of Code: [.03(5)(j)1&2 ] Employee drinking from a single use cup with a lid & no straw. Placed drink on drainboard of vegetable prep sink. Had employee place straw in container & relocate to an approved location. Employees shall consume food only in approved designated areas separate from food preparation and serving areas, equipment or utensil areas and food storage areas. However, drinking from a single service beverage cup with a secure lid and straw that is handled to prevent contamination of the employee’s hands, the container, exposed food, clean equipment, utensils and linens, unwrapped single-service and single-use articles will be allowed.  Corrected On-Site.  New Violation.          
  • Thermometer calibration check: 32.8 deg. F; 32.5 deg. F; 33.6 deg. F. Atkins/Thermapen/DeltaTRAK. Time control written procedures in place. Reviewed proper cleaning of tables with staff. Provided rule. Had one employee remove watch. Re-locate pinboard with push pins & staples so that it's not above vegetable prep sink.
