• Hand sink near dish machine is obstructed by trash can. Advised PIC that hand sink must be easily accessible at all times.
• Observed seafood (fish, shrimp, and salmon) stored above broccoli in reach in cooler. Also, observed beef stored next to chicken in walk in cooler. Advised PIC that all raw animal foods should be stored according to their final cooking temperature. All seafood was relocated.
• Observed several ready to eat food that exceed 7 days date marked on container. Explained to PIC that all TCS or RTE may only be held for 7 days and then discarded. All foods that exceeded 7 days from date marked was discarded.
• Observed plastic to go container used as scoop in bulk lentils. Advised PIC that all scoops must have handles.
