Remarks: Several food items were not being maintained at 41 F or lower. Chlorine sanitizer, in the compartment sink, was at a concentration higher than 100 ppm. Crumbs and residue was scattered on the ledge directly over the grill station. Clean this surface. The remnants of date labeling stickers were present on the exterior of food storage buckets.

Remarks: Employee did not wash his hands prior to putting on a new pair of gloves to continue working with ready-to-eat foods. Testing strips for quaternary ammonium sanitizer were not in supply. Excess water was coming from a leaking PVC drain pipe under a kitchen handwashing sink.
